I'd like to make an 8-stringer, the two lowest strings - Low C and Low D - would not be designed to be fretted.
Any suggestions as to how to approach this?

I have taken a normal body and added a wider neck. But I fretted those two strings. You are describing a harp guitar. You can do what you are talking about with a normal sized neck with a head stock extension for the two strings. For the same reasons that professional players like to use them - extended range, more and easier open tunings. Somewhat like a harp guitar, essentially, but easier to make.
